This super fresh broken wheat salad, with chopped cucumber, tomato, capsicum, onion and drizzled with a dressing made of olive oil, lime juice, honey, red chili flakes and black pepper powder. It’s refreshing, light and packed with healthy ingredients. This salad is perfect for the summer as broken wheat takes few minutes to cook and rest of the vegetables and greens need just to be washed and chopped before adding to the salad.
- In a bowl, add crushed wheat (RUCHI Daliya) and pour boiling hot water over it and soak for 10 minutes and strain the Daliya using a strainer. Now steam the Daliya for 10 minutes and allow it to cool down.
- For the salad dressing , in a separate bowl mix lemon juice, salt, honey, chili flakes, black pepper powder, olive oil and set aside.
- Now transfer the cooled and cooked Daliya to a large bowl and add chopped onion, tomato, capsicum, cucumber, coriander leaves, mint leaves, green moong sprouts, boiled chickpeas and toss to combine.
- Add about half of the dressing to the salad and toss until well coated. Taste for seasoning and serve.
